What is Pimento Cheese?


Pimentos are sweet and mild, and unlikely to cause trouble if you cannot tolerate spicy peppers because they register between 100 and 500 heat units on the Scoville scale, making them one of the mildest of all the chile peppers, a sweeter and more aromatic red bell pepper.

The Pimento Cheese is a Southern staple mix, also known as “southern pâté in some circles'', “Carolina caviar” and “the caviar of the south”. Some people consider Pimento cheese “a cornerstone for any accomplished southern cook’s repertoire”, since it is so popular that either children at school, or adults at The Master’s Golf can resist the Pimento Cheese Sandwiches!!


What makes Pimento Cheese Sandwich so special?


Well, for us there are many reasons!! 


1st  If you taste Pimento Cheese, you will know! It is so delicious and quite a “soft” mix that it is difficult to stop eating it! Pimento Cheese can be eaten as stuffed in a sandwich, but also as a spread for crackers or on top of thinly sliced toasted bread as a bruschetta or montado.  You may also pair it as a dip for vegetables like carrots or celery or corn chips and tortillas!! You even may try it slathered over hamburgers or hotdogs.

Pimento cheese is on the menu of many southern restaurants and catering companies, and can´t be missed in your Family Cookbook.  It’s a great option for literally any occasion!


2nd  Its origin -unknown for many- and the history behind it… Did you know that Pimento Cheese traces its roots to the North? It was actually invented in New York, in the early twentieth century.  By that time, packaged cream cheese came about and people used it in everything.  A decade or so later, pimento peppers canned and shipped from Spain -which were very expensive to import- became increasingly popular and afterwards, the mixture was created.

An industrious Georgian farmer saw an opportunity and started growing and distributing pimentos in the U.S. Griffin, Georgia, eventually became the center of the nation’s pimento-canning industry.  Some say this is what brought the dish to the South, and became a staple!

How to make the Georgia Pimento Cheese Sandwich?


Step 1: Prepare Pimento Cheese Mix

  1. In a large bowl, combine the Alioli, a part of the liquid reserved from Pimientos, and all other ingredients EXCEPT for cheese and pimentos. Whisk well.

  2. Add cheese and well-drained pimentos and mix using a large spatula. If necessary, add more alioli or the rest of the liquid from Pimientos Piquillo for proper consistency.


Step 2: Prepare Sandwiches and enjoy!!!!


Tips and Tricks to prepare the best Pimento Cheese Sandwiches


  • Why Pan Cubano?

    • We recommend using Cuban Bread (Pan Cubano) because:

    • being a dry bread by design, this flaky and light bread, will provide you with the desired crunch while holding up all the moisture you top it with. You can soak it, press it, and pour as many sauces you want to your sandwich. It won’t get soggy and it will allow your sandwich to keep good and crunchy from down to lunch.

    • Its appearance: light white and porous interior and its light brownish mate outside crust. Simply looks yummy!

    • “Crunch-stumer” satisfaction. When having a panini sandwich or a piece of toast bread, you want the crunch to rumble into your head, without hurting your palate. That is what an authentic Cuban bread achieves every single bite.

  • It is best when Pimento Cheese is stored for at least 12 hours in a glass or an airtight container in the refrigerator to allow flavors to mingle. 

  • Bring pimento cheese to room temperature prior to making sandwiches or serving as a spread/dip. This way it would be easier to spread on the bread without tearing it apart (if using common sliced bread)

  • When making sandwiches in advance... 

    • You may spread a thin layer of unsalted butter and then a thin layer of mayonnaise on each slice of bread before spreading the pimento cheese. This is to prevent soggy sandwiches.

    • Separate layers with wax paper and store in zip-lock bags or air-tight containers in the refrigerator.
