What is a Santa Fe Grilled Chicken Sandwich?
This is not a common Chicken Sandwich like any other you may have tried. First, because this is a cheesy warm grilled-chicken sandwich, and then, because we gave a very special boost with some grilled vegetables, and our special Alioli recipe, to which we added some fresh herbs this time to give an additional extra flavor. This is perfect for a weeknight meal or a quick lunch, it’s your choice when you prefer to try this delicious and toasty sandwich and enjoy it from start to finish!
Ingredients to prepare a comforting Santa Fe Grilled Chicken Sandwich
1 Boneless skinless chicken breast
Salt and pepper to taste
Garlic
Swiss cheese
2 Bell Peppers (Red/Yellow)
Onion
Avocado
Alioli*
Cilantro (fresh)
Chives (fresh)
Cuban Bread
How to Prepare your Santa Fe style Chicken Sandwich?
Prepare the Chicken. Thinly cut or pound chicken breasts to ½ inch thickness. Season with kosher salt and pepper to taste, and add the crushed garlic as well. Place in a bowl or shallow dish, seal it with a lid and let it marinate in the fridge.
Prepare the Alioli sauce, you will find our delicious and easy to make recipe here and once ready, add to the mix some fresh minced cilantro and chives, and set aside. This is the boost for your sandwich!
Prepare vegetables: grill and slice peppers and onion.
Cook marinated chicken on grill over medium heat. It is important to cook it well but we want it as juicy as possible, so do not overcook it. Cook until the internal temperature reaches 165F.
Bread. Cut the Cuban Bread the size you want your sandwiches to be and lightly coat the inside with butter (optional). Place the butter side down in a skillet heated to medium heat. Cook until the inside of cuban bread is toasted golden brown.
Assemble the sandwiches. On the bottom side of the bread, place a cooked chicken breast, a slice of Swiss cheese and the amount of Alioli you want, then top with the grilled vegetables and the sliced Avocado -or leave it aside if you prefer-. Finally, top with the other half of the cuban bread, and enjoy!
Tips and Tricks
Cuban Bread is ideal for this Sandwich because it can hold all the moisture of grilled chicken and vegetables and of the Alioli sauce too without breaking apart!!
We recommend preparing chicken in advance, to let it marinate at least 1 hour prior to cooking.
You can prepare Alioli sauce in advance. Remember it is served at room temperature, and specially for this warm sandwich, you want it that way. Therefore,, take the portion you are going to use out of the fridge 20 min.or so, prior to assembling your sandwiches.
Don’t pay attention to those who say that Alioli and Mayo are the same… once you taste Alioli, you will never go back!!
Cut avocado at the end, to prevent its oxidation and becoming brownish.
