What is Lomo Saltado?
Lomo Saltado is a very popular, traditional Peruvian dish, a stir fry that typically combines marinated strips of sirloin with onions, tomatoes, french fries, and other ingredients; and is typically served with rice. If you have traveled to Peru or have Peruvian friends, you know this is one of many amazing Peruvian delicacies of its traditional cuisine.
Lomo Saltado is one of the staple dishes of the “chifa cuisine”, which is a fusion between Chinese and Peruvian cuisines, and as someone said "the fusion of the old and new worlds".
The word "saltado" refers to stir fry (salteado in other Spanish-speaking countries, from the French "sautée", that means to "jump"); a widely recognized Chinese cooking technique. Therefore, "saltado dishes" are commonly known in Peru to have a Chinese cuisine influence, being Lomo Saltado one of its many contributions to the Peruvian cuisine.
Today we bring you our recipe for a very special, juicy and mouthwatering Sandwich with this amazing Peruvian flavor!
Ingredients for an Authentic Lomo Saltado
How to prepare a delicious Lomo Saltado?
Cut the meat - order a thick and tender steak - into strips similar to those of French fries. Marinate the meat in vinegar, soy sauce and condiments (salt, garlic, parsley). Brown them in the pan or better in a wok over high heat, so that they are very juicy inside. Save the meat and juices for later.
Cut all the vegetables -except the tomato- into large and coarse pieces, so that they do not become poached; we want the pieces to look very golden. Also add the peppers and chillies (without veins or seeds). Sauté all these ingredients in the wok with the bay leaf until they are to your liking. Add the tomato cut into large segments and sauté it too, trying not to overdo it.
Return the meat and juices to the wok.
Continue to sauté the whole while the sauce thickens. When it starts to bubble, turn it off… It is ready to serve!!!
This dish is usually served with rice and french fries (Yes, both!!). But this time instead, we are preparing delicious sandwiches!
Once your Lomo Saltado is ready, cut your Pan Cubano or Cubanitos in halves, and toast them a little bit. You may add some salted butter and rub natural garlic in one of the halves of each sandwich if you want. Then, serve the Lomo Saltado onto the bread ensuring that each portion has abundant pieces of meat and vegetables as well. Be generous with the sauce and do not worry! Your bread won’t get soggy!.
Now plate the sandwiches, garnish with french fries… and, ENJOY!!!
Tips & Tricks for your Special Lomo Saltado Sandwich
Using Cuban Bread or Cubanito guarantees that you can enjoy your juicy sandwich without soggy messy pieces, because it was specially made by design to hold a lot of moisture!
For perfect French fries, - that means golden and very crunchy outside but soft and well cooked inside- first you must remove the starch they naturally have. Peel the potatoes and cut them. Then wash the potatoes with cold water. Let them rest for a while dipped in a mix of cold water and white vinegar. Wash vinegar off a few times with cold water again. Let them dry or do it using paper towels (to avoid dangerous splashing) and fry your potatoes in hot oil. Add salt to taste.
