This is a South Carolina style BBQ in a Sandwich! As you may supposed, it’s filled with tender pulled pork which you could smoke or not -it depends on your preferences- but what is a must to differentiate from any other BBQ sandwich is the sauce will use to deep the pork into, which is known as the “Gold Sauce” due to its golden color since it’s mustard based.


Ingredients to prepare the “Gold Sauce”


In case you haven’t had the pleasure yet to taste this famous sauce, which is a South Carolina’s hallmark, this is a delicious sauce with a tangy, slightly sweet and hot flavor. It is very easy to prepare! 

You just have to mix all the ingredients listed below very well, until the sauce gets a smooth texture.

How to Prepare your amazing South Carolina style Pork Sandwich?


On this occasion, we preferred not to smoke the pork nor to give it a smoked taste -even though we like it too- but to enjoy its flavor just the way it is!


  1. Prepare the Pork meat (24 hrs prior to serve) 

    • Take out the pork from the refrigerator about 10 minutes in advance.

    • Using the lime, wash the pork evenly, rubbing effusively. Rinse off repeatedly with cold water (until no lemon residue remains).

    • Season the pork with salt, onions and garlic (finely chopped). Add the juice you chose (pineapple or peach) and beer. 

    • Leave it in the marinade, well covered and in the refrigerator, until the next day. 


  1. Cook the Pork:

    • Drain the pork well and place it on a tray with the fat side up (keep the marinade).

    • Sprinkle a tablespoon of sugar and a little oil on top.

    • Bake uncovered at 400F until golden brown (30 min approx)

    • Add marinade and lower temperature to 300F.

    • Cover and “wash” the pig with the marinade every 10 minutes approx and bake until when you prick with a fork, the water comes out clear. Once cooked, let it rest to cool (at least 15 min.)


  1. While the meat is cooking, prepare the mustard barbecue sauce.


  1. Shred the meat

    • Pull apart the meat with a couple of forks. Meat should have a shredded look to it.

    • Mix shredded pork along with a little bit of juice from the tray to taste. Add sufficient barbecue sauce to the mixture to achieve desired taste.


  1. To serve:

    • Cut and Toast your Cuban Bread.

    • Spread “Gold sauce” on the bottom of your Cuban Bread.

    • Put a layer of pulled pork on the Cuban Bread. Spread barbecue sauce over pork meat.

    • Spread the top of Cuban Bread with more sauce.

    • Leave a jar of Gold Sauce on the table… it is never going to be enough! Trust us!... Enjoy!!!

 

Tips & Tricks

  • We chose Cuban Bread because it is made by design to hold lots of moisture. So, if you want a delicious bread, and enjoy your sandwich from start to end -and not disastrous pieces of it- this is the kind of bread you need when planning a Sandwich to hold large amounts of sauces or juicy meat.

  • You may add lettuce, arugula or coleslaw to your sandwich, and give and extra crunchy and fresh flavor.
